Elana recently tried a meat-free recipe - but she added a few twists to make it her own. Elana shared her recipe below:
Ingredients
Burger Patty:- Beans – I managed to cook the dry beans from scratch. However, to save time just purchase a tin of red kidney beans and drain the liquid;
- Chopped red onion;
- Chopped fresh coriander leaves;
- Salt and pepper;
- Breadcrumbs – I purchased my breadcrumbs over the counter to save some time.
Method:
Chop up all the ingredients and add to a blender, it was hard to blend but I added a bit of water to my mixture in order to blend it easily.
Once all chopped, blended, and mixed together, take the course batter/mixture and place it in the freezer for 10 minutes or a bit longer if you prefer. This is an important step, otherwise they fall apart when frying.
After 10 minutes or more, remove the mixture from the freezer, heat your pan to medium hot or as hot as you think it should be in order to fry any burger patty and add oil to the pan. Make “balls” out of the mixture, place balls into the frying pan, and lightly press them flat with a fork, and fry them until brown.
