Takeaway Wednesday: Wanda's chicken livers

Wanda Rademeyer's chicken livers have made her quite famous in her neighbourhood. Here's how you can recreate the dish at home.
Chicken livers are a contentious meal.
If you can't get past the idea of eating innards then you won't enjoy the meal, but if you like a versatile meat that can be turned into a crowd-pleasing party dish with the right combination of ingredients (and without you having to spend too much money), then you are in for a treat!
Wanda Rademeyer has earned herself the nickname "Chicken Lady" with this recipe. If you've been looking for new ways to prepare this kitchen staple, look no further than the recipe below.
Ingredients
- 250g chicken livers
- 1 onion
- 2 garlic cloves
- 1 tablespoon BBQ spice
- 1 teaspoon fresh ginger
- 1 tablespoon curry powder
- 1 tablespoon turmeric
- 1 teaspoon coriander
- 1 teaspoon cumin seeds
- 1 sachet tomato puree
- 1 can of boerie relish (sweet tomato)
- 1 can of chakalaka
- 125ml of fresh cream
Method
Brown the onion in coconut butter and add spices.
Add chicken livers and fry until golden brown, then add tomato puree and boerie relish.
Add chakalaka and two cups of water.
Let the mixture simmer on low heat for 45 minutes.
Add cream and leave to simmer for another 15 minutes.
Serve with pap or bread.
