Takeaway Wednesday: Katy Mathunjwa shares her special cottage pie recipe

Scenic Drive listener Katy Mathunjwa shared her "secret" recipe for a hearty cottage pie. Here's how you can recreate the dish at home.
Temperatures are dropping, which means it's time to pull out your favourite comfort food recipes!
A cottage pie is always a great option for sating appetites and warming stomachs. Here's how Scenic Drive listener Katy Mathunjwa makes hers.
Ingredients
1 onion (finely chopped)
4 medium carrots (finely grated) (1/3 of the grated carrots will be cooked with potatoes)
5 medium potatoes (peeled and soft-boiled)
700g lean beef mince
1 pack of soya mince (savoury)
500g Gouda Cheese (grated)
Pinch of salt (for potatoes)
Method
- Fry the onion until transparent and soft, then add 2/3 of the carrots
- Add the lean mince and fry until cooked
- Add the soya mince as per the packet into the microwave and add to the roasted mince mixture
- Mash the potatoes and 1/3 of the carrots; add a large amount of cheese and mix well
- Spoon the mince mixture into an ovenproof dish; add the potato and cheese mixture on top
- Bake it in the oven for +/- 30min or until the potatoes are golden brown.
Enjoy your cottage pie with a green salad on the side.
