Elsabe's baked chicken and pecan nut pie were a hit on The Scenic Drive with Rian. You can recreate the dish at home with this recipe.
When Rian put out a call for the best home cooks in our broadcast area, the votes came rolling in. The home cook who started us off is Elsabe, who brought baked chicken, pecan nut pie and Rian's current craving, bean soup and vetkoek.
The baked chicken was a hit, and Elsabe was gracious enough to share the following recipe with The Scenic Drive.
For the chicken
In an oven-proof dish, lay out chicken; add chopped onion and chicken or barbecue spice. Cover the chicken with a lid and bake in an oven for 45 minutes. Set the oven to grill halfway through cooking so that the meat bakes evenly.
In a separate pot, mix a sachet of chicken (or mushroom, if you prefer) with 500ml of milk; add chutney and mayo to taste. Pour this mixture over the chicken and bake until the sauce is thick.
For the pecan nut pie
Cream crackers
12 egg whites
4 teaspoons of baking powder
250g of pecan nuts
3 cups of sugar
Condensed milk
Cream
whisk egg whites until stiff, then add baking powder
Slowly add sugar and set it aside
In a separate dish, crush pecan nuts and crackers until fine
Fold biscuits into the egg white mixture; mix well
Pour the mixture into a baking tray and bake at 180 degrees, or until golden brown
Take the pie out of the oven and set it aside to cool
Spread a layer of condensed milk over the pie
Whip the cream until stiff and spread that over the layer of condensed milk
*Cut down on carbohydrates by halving the crackers and doubling up on the nuts instead
