At The Black Ant in New York City patrons can have tacos and burgers flavoured with a very special ingredient: grasshoppers.
Chef Mario Hernandez of The Black Ant in New York City prides himself on offering his patrons authentic Mexican food with an unexpected twist.
Chef Mario has found a way to keep people coming back to his establishment for tacos, burgers, seafood and, of course, guacamole, by adding an interesting organic ingredient: insects.
Yes, Chef Mario serves fried bugs as part of his traditional menu. While others may find this outlandish, Chef Mario maintains that adding ants and grasshoppers to his dishes enhances the quality of the food at his establishment: "It’s a really important part of Mexican gastronomy. Ever since I was really young, my grandma and I would harvest grasshoppers and ants, depending on the season, and cook them.”

But don't worry: the ants served by Chef Mario are organically sourced from Oaxaca, Mexico along with the grasshoppers. The food at The Black Ant follows a global trend of incorporating sustainable sources of protein into menus.
Reviewers at the Business Insider described the flavour of the grasshoppers and ants as "a cross between crispy beef and seafood".
